DAY 1- AFGHANISTAN (Kabul)
Today we attempted to create a staple Afghan breakfast dish
Afghan Tomatoes and Eggs- Tukhum Bonjan
1 1/2 medium onions chopped
4 medium tomatoes chopped
Saute the tomatoes on a medium heat until soft, then add in onions until cooked. Finally add in the eggs and scramble them throughout the vegetables. Serve on warm Afghan bread.

Lapis Lazuli is not the only gem to have come from Afghanistan. Due to the varied climate of Afghanistan, a multitude of different crops and livestock are able to be cultivated, allowing for a richly diversified cuisine. The country is mostly acclaimed for being a major exporter of fruits such as berries, grapes, pomegranates, plums, and apricots. As the country is surrounded by Iran, Pakistan, India, China, Tajikistan, Uzbekistan, and Turkmenistan, influences from each of these countries appear quite strongly within the Afghan diet.
